Soup for the soul

Mark, Miles and I are overwhelmed with all the love and support we had today at Miles blessing. Where would we be without family? I am so grateful that we were able to share this special day with so many of you. My soup was a hit, but I can’t take credit for the delicious soup. Amanda, whose recipe box I would love to raid with delicious homemade wheat pancakes, BBQ chicken pizza, pesto sandwich, and many more, gave me this recipe last year. This soup is our favorite go-to soup on a cold or warm day. It’s good to the soul. Thanks Amanda, it was a hit! Here is the recipe in her words: Chicken with Wild Rice 2 c. water 4 c. chicken broth 2 boneless chicken breast (I cook these first, shred and add back at the end.) 1 box long grain wild rice (Rice-a-Roni is the best.) 1/2 t. salt 1/2 t. pepper (I would recommend halfing this.) 3/4 c. flour 1/2 c. butter (I use 1/2 to 3/4 of this, still good.) 2 c. milk or cream Combine water and broth, heat just to boil. Add rice (not seasoning). Cover and remove from heat. Melt butter in 2nd pan. Add seasoning, salt, pepper, and flour. Add milk, cook 5 min. or until very thick. Stir into soup. Medium heat. Stir continuously (rice will stick) for 10-15 min. I add the French cut frozen string beans about 10 before it's done. P.S. I used Soy Milk instead of milk as we have a new small and sensitive tummy in our family. P.P.S. Amanda you should start a recipe blog. I will be your biggest fan! What are you doing sitting there? You need to get going on this. . . I’m waiting. . .

  2. Andrae I just had to tell you that your baby is adorable and I am so happy for you guys! And thanks for the recipe I am going to try it this week. Is your hubby in the rad tech program? I can't remember what you told me the last time we talked.
